Okay. Here's the main question that has been troubling me. I have this particular printer and I want to edit the fax header so that it indicates to my clients how many pages I am going to send to them. So, when I am faxing certain documents I want the fax header to automatically fill in the amount of pages that I am sending.

Your TTX heading at the top of the page should already do that. The TTX heading is the small printing at the top of a received fax.
